Banana Loaf
Makes 14 slices
INGREDIENTS:
1 cup self– Raising Flour
1 cup wholemeal self raising flour
1/4 cup raw or brown sugar
2 ripe bananas, mashed
Juice and grated zest of 2 Oranges
1 egg. Lightly beaten
1/4 cup Polyunsaturated or Monosaturated Oil.
METHOD:
Combine Flours and Sugar.
Mix the remaining ingredients together then mix with the flour and sugar.
Pour mixture into a lightly greased loaf tin
Bake in a moderate oven (180 degrees) for 45 minutes or until cooked.
Serve with a glass of milk for a complete breakfast.
